PROBLEM TO BE SOLVED: To obtain kneaded candy having good gloss and freshness, free from roughness and having good palatability and excellent in taste and texture by adding a water-soluble vegetable fiber obtained by partially decomposing thicking polysaccharides to candy. SOLUTION: A water-soluble vegetable fiber obtained by partially decomposing thickening polysaccharides such as guar gum, locust bean gum or Tara gum, preferably in an amount of 0.2-5wt.% (based on candy) is added to candy to provide the objective kneaded candy. Furthermore, partial decomposition of the thickening polysaccharides is preferably carried out using galactomannase which microorganisms of the genus Asperugillus produce. |
