PURPOSE:To soften bone of roast fish in a short time, by putting bone of roast fishes in an air-tight heat-resistant pressure container, heating the container to attain set pressure and reducing the pressure to atmospheric pressure. CONSTITUTION:Roast fishes 8 with bone are put in an air-tight heat-resistant pressure container 1, the container is heated by a heater 4 until the pressure reaches pressure set depending upon the kind of fish, 5kg/cm<2> in the case of opened horse mackerel and heating is stopped when the pressure reaches the set pressure. After a while, a degassing stopper 3 is opened to give roast fishes having softened bone. In the fish bone softening device, the roast fishes with softened bone are obtained by simple operation of heating the air-tight heat- resistant pressure container 1 and raising the pressure in the container. Consequently, since heads and bone of fishes which have been abolished are effectively used, treating labor is saved, simultaneously edible ratio of fish is raised and nutrition intake is improved. |
