<p>Alcohol-free beer is obtained by continuous fermentation in a fluidised bed reactor using yeast grown on open-pore sintered glass supports of particle size </= 5 mm having pores between 50 and 500 mu m at temperatures between 0 and 20 DEG C at low temperature with a residence time controlled in accordance with the desired low alcohol concentration. Sintered glass supports are preferred having pores between 50 and 300, in particular 60 and 250, mu m and porosities between 30 and 65%. Particle sizes between 0.5 and 4 mm are preferred, in particular 1-3 mm. Fermentation takes place in particular at 0.5-10 DEG C. Residence times between 1 and 12 hours, in particular 2 and 8 hours are expedient. The yeast cells grown on the support are cultured in particular in a start-up phase in the fluidised bed reactor by inoculation with yeast concentrate at 20-35 DEG C, in particular around 30 DEG C, and residence times below the generation time of the yeast over a few days. The bed volume of the perticulate material in the fluidised bed reactor is, in particular, 25-30% of the working volume and the fluidised bed volume is 40-60% of the working volume. Gauge pressures of 0.5-3 bar are preferred. <IMAGE></p> |
