PROBLEM TO BE SOLVED: To obtain fried food of devil's tongue potato having intestinecontrolling action, vasodepressor activity, bowel movement-promoting action and obesity-preventing action and excellent in texture and taste and useful for snack cake, etc., by slicing raw devil's tongue potato, frying sliced potato and seasoning the fried potato. SOLUTION: Raw devil's tongue potato is sliced and further preferably, the sliced raw devil's tongue potato thin piece is subjected to immersion treatment with an alkali solution and fried and seasoned to provide the objective fried food of devil's tongue potato. Furthermore, the fried food contains alphatized potato starch and konjak mannan as main components and has taste of devil's tongue potato and is used for foods for beauty, foods for health, foods, etc., for prevention of obesity. |
