PROBLEM TO BE SOLVED: To provide manufacture of noodles and manufacture of frozen noodles capable of obtaining the noodles having an excellent quality and taste without sliminess for which softening area time is prevented. SOLUTION: The noodles are manufactured so as to turn the temperature of the noodles to 0-30 deg.C under the environment of a vacuum degree 700-760mmHg and to turn the moisture content of the noodle to a value lower for 1-3% for the noodles washed after a steaming processing and the frozen noodles are manufactured by freezing the obtained noodles. Or, the frozen noodles are manufactured by freezing the noodles washed after the steaming processing next under vacuum. Or, the frozen noodles are manufactured by turning the temperature of the noodle to 0 deg.C-15 deg.C under the environment of the vacuum degree 700-760mmHg and turning the moisture content of the noodles to the value lower for 1-7% for the noodles washed after the steaming processing. |
