The present invention relates to polypeptides, specifically polypeptides having transgalactosylating activity and nucleic acids encoding these, and their uses in e.g. dairy product. It is an object of embodiments of the invention to provide a polypeptide which has a useful ratio of transgalactosylation to hydrolysis activity and thus are efficient producers of GOS when incubated with lactose even at low lactose levels such as in a milk-based product. The present inventors have surprisingly found that the polypeptides disclosed herein are efficient producers of galacto-oligosaccharides for example in situ when incubated in a lactose containing composition such as milk, wherein they have an efficient conversion of lactose into GOS resulting in a lower amount of free lactose. |
