<p>The present invention relates to the production of an industrial strain of baking yeast capable of expressing and exporting to the external cellular medium the endoxylanase enzyme X24 of Aspergillus nidulans and to the production of an industrial baking strain capable of expressing and exporting to the external cellular medium, in combination, the endoxylanase enzyme X24 of Aspergillus nidulans and the α-amylase enzyme of Aspergillus oryzae, in order to enhance the process of degradation of the hemicelluloses and starch present in flour and, consequently, improve the volume, texture and average life of the bread baked. To this effect, the genes corresponding to said enzymes have been introduced into the yeast and their expression has been regulated by a typical yeast promoter, for example that of the gene of actine pACT1 which is, additionally, functional in industrial growth conditions in molasses.
