[Also in Division C6] A composition for use in the concentration of sugar juices comprises from 10 to 40% by weight of a hydrolysed polyacrylamide or polymethacrylamide, from 10 to 25% of a protective colloid and, in addition, from 5 to 15% of at least one ethylenediamine tetraacetic acid or salt thereof, and/or 5 to 15% of at least one gluconate and/or from 35 to 70% of at least one polyphosphate. Suitable colloids are sodium alginate, carboxymethylcellulose, mannogalactan and protein colloids. The polyphosphate may be sodium tripolyphosphate or sodium hexametaphosphate.
