<P>PROBLEM TO BE SOLVED: To provide a method for impregnating liquid intended for suppressing lowering of quality caused by e.g. breaking into pieces of food stuff while cooking. <P>SOLUTION: An apparatus for impregnating liquid has an area 5 holding a container 4 in which food stuff 2 is soaked in liquid, a pressure-reducing means 7 in the area 5, a pressure-restoring means 8 in the area 5, and a control means 11 of controlling the pressure-reducing means 7 to reduce pressure in the area 5 to below atmospheric pressure and then controlling the pressure-restoring means 8 to restore pressure. The control means 11 restores pressure through gradually increasing pressure in the area 5. The pressure-restoring means 8 includes a pressure-restoring valve 27 capable of adjusting opening degree, and the control means 11 restores pressure through gradually opening the pressure-restoring valve 27 and gradually increasing pressure in the area 5. <P>COPYRIGHT: (C)2005,JPO&NCIPI |
