The present invention relates to a producing method of a fruit extract and, more specifically, to a producing method of a fruit extract which goes through a multi-aging step to have unique taste and rich flavor of the fruit by inhibiting over-fermentation. In addition, the present invention relates to a producing method of a Japanese apricot extract as a typical example. The producing method of a fruit extract comprises: a washing step; a first aging step; a first aging solution collecting step; a second aging step; a second aging solution collecting step; a third aging step; a third aging solution collecting step; a mixing step; and a sterilizing step. |
