The invention concerns a recombined enzyme capable of being involved in exopolysaccharide biosynthesis by a bond in the form of an isomer alpha or beta between the carbon 1 bearing the aldehyde reducing function of an activated D-Galp and a lipophilic primer phosphate, in particular of the undecaprenol or protein type, particularly of the ACP (Acyl Carrier protein), so as to ensure progressively the formation of said exopolysaccharides with at each stage the addition of a new saccharide unit which is urged by its semi-acetal function to be bound to an alcoholic hydroxyl of another saccharide unit, which is at the end of a saccharide chain bound to said primer.
