PURPOSE:To obtain an oyster juice of excellent quality by draining a raw oyster, then boiling and heating the oyster in two stages and subsequently concentrating the boiled and heated liquid, above-mentioned drained water and water washings after the boiling stepwise in a concentrating vessel. CONSTITUTION:A raw oyster is drained, boiled and heated for about 3-10min while being stirred and conveyed at 70-85 deg.C hot water temperature to provide a boiled and heated liquid, which is then secondarily boiled and heated at 85-95 deg.C hot water temperature to afford a boiled and heated liquid. The resultant boiled and heated liquid or drained water obtained by the afore-mentioned draining and/or water washings prepared by washing the oyster after the boiling and heating are fed to a concentrating vessel, heated with heating steam passed through a steam coil and stepwise concentrated to provide the objective juice having unique color, luster and essential flavor without burnt smell. |
