Process for the preparation of K-carrageenase

Microbiological process for preparation of K-carraghenase from K-carraghenan in the presence of Pseudomonas carrageenovora, Alteromonas or Cytophaga with control of the pH of the culture which a nitrogen base assimilable by the bacteria. Preferably the nitrogen base is selected e.g. from ammonia, aliphatic amines, aromatic amines and hydroxylated amines. The bacterial culture is preferably Pseudomonas carrageenovora ATCC 43555 or NCMB 302. Preferably the enzymatic activity of the product is greater than 20 Ugal/ml.
