PROBLEM TO BE SOLVED: To provide a raw material capable of simply producing a mousse-like, air-containing gel food uniformly holding bubbles only by slightly mixing a yogurt with one or more raw materials without heating the materials, when a yogurt cake it made by hand in home, and to provide a method for producing a new air-containing gel food using the raw material. SOLUTION: This raw material consists mainly of a gelling agent soluble in cold water and having formability on dissolution in the cold water, and is used for producing a air-containing gel food. The air-containing gel food is produced by mixing the raw material with yogurt and subsequently refrigerating and gelling the mixture. |
