摘要 Imparting a whipping effect necessary for forming air bubbles uniformly and in a short time can attain enhanced whipping with lowered physical damage, thus enabling the production of high-quality cakes. Such a whipping effect can be imparted to fluid egg by passing fluid egg from a tank (2) and gas from a gas feeder (3) to a whipping device (5) by pressure transfer, the device (5) being composed of a casing and two discs each provided thereon with a forward-open small chamber and placed in the casing with the chambers connected to each other.
