摘要 In a process to vary the flavor of processed potatoes or chips ('French fries'), the food is submerged in a bath of alkaline solution with a chosen flavoring additive. Alternatively, the food may be (a) placed in a steam bath with a chosen flavoring additive; (b) pickled by needle injection of flavoring; (c) flavored by the addition of a granulate substance; (d) flavored by being subjected to a flavoring substance at high pressure; or (e) flavored using a high pressure pendulum application process.
