CONJUGATED LINOLIC ACID ESTER, ITS PRODUCTION AND ITS USE

PROBLEM TO BE SOLVED: To obtain a conjugated linolic acid ester having higher oxidation inhibiting activity. SOLUTION: This conjugated linolic acid ester is represented by R1-COO-R2. R1 is an aliphatic hydrocarbon group represented as C17H32 and having one conjugated double bond, and R2 is a hydroxy group or an organic compound residue containing one or more ester linkages such as in phospholipids, sterols, saccharides, or organic acids. This conjugated linolic acid ester is produced by esterification or transesterification of a conjugated linolic acid with an organic compound having one or more hydroxy groups or ester linkages. This conjugated linolic acid ester has higher antioxidative activity than that of a conjugated linolic acid, and is usable as an antioxidant or for the oxidation inhibition of foods/drinks.
