PURPOSE:To provide the subject food additive capable of improving the shelf life of various kinds of processed foods. CONSTITUTION:The objective food additive is prepared by using sodium acetate and a pH adjuster as the main agents and by ending table salt and potassium chloride as auxiliary agents with the main agents. As the above-mentioned pH adjuster, acetic acid or pyruvic acid is used in the case of liquid dosage form. Adipic acid, citric acid, malic acid, succinic acid, fumaric acid, sodium fumarate, gluconic delta-lactone, a phosphoric acid salt, etc., are suitably combined to use in the case of powder dosage form. |
