<p>PROBLEM TO BE SOLVED: To provide a practical method for keeping the freshness of raw lotus roots, capable of keeping the commercial value of the raw lotus roots, for a long time. SOLUTION: This method comprises washing raw lotus roots in water, pre- treating with a germicide consisting of a chlorite, organic acids and an alcohol, washing the resultant in water, storing with a freshness-keeping agent comprising an alkaline compound and an absorbing material in a bag having gas barrier property, sealing the resultant and holding at a refrigerating temperature of 0-10 deg.C. The raw lotus roots keeps its fresh taste from the field without deteriorating surface color or generating bad smell for two weeks or more.</p> |
