PROBLEM TO BE SOLVED: To provide a foodstuff processing apparatus capable of forming a decorative knife cut on the surface of a foodstuff by a low driving force and improving productivity of a commodity and to obtain a processed food supplied with a palatability different from the essential palatability of the foodstuff. SOLUTION: A transportation means 1 for supplying and transporting a foodstuff raw sheet S to a cut forming apparatus is provided with a guide bottom plate 9 for guiding an endless conveyor belt 5 while making the cross-sectional shape of the conveyor in the width direction into a recessed circular-arc state from an upstream to a downstream at a cut formation position in the middle of the transportation of the upper transportation route of the conveyor belt 5 to form the guide route of the conveyor belt 5. A cutter means 2 for forming cuts on the foodstuff raw sheet S to be transported is, rotatably and nearly concentrically to the guide bottom plate, equipped with at least one cutter blade 11 for forming cuts approximately in the perpendicular direction to the transportation direction on the surface of the foodstuff raw sheet S at the cut formation position. |
