The invention invention concerns a method for continuously crystallising fats and oils, more particularly of vegetable and animal origin, and of the corresponding fatty acids. The method comprises a step wherein the previously melted fat is sucked up by a hydro-ejector thereby producing a mixture of microcrystals, which is separated either by centrifuging, or by filtering depending on the type of fat. The separation of the crystals can be done by phase separation and filtering, preferably by membrane filtration.
