PROBLEM TO BE SOLVED: To accomplish a technological development effective for the soybean processing to afford Sendai miso with color tone, commonly called 'yamabuki color' (golden yellow), as a quality characteristic. SOLUTION: This soybean steaming unit is made up of a mixing valve 1 for producing vapor/liquid mixed-phase steam by feeding water into steam and a pressure steamer 2 for accumulating soybean inside, and furthermore, is equipped with a spray nozzle 3 on the upper part of the steamer 2 for the purpose of spraying an accumulated soybean layer with vapor/liquid mixture steam and a drain port 4 on the lower part of the steamer. |
