PROBLEM TO BE SOLVED: To obtain fermented soybeans which are almost odorless, soft, have a high content of flavor component, good stringiness and a high content of functional component. SOLUTION: Steamed soybeans are mixed with boiled unpolished flour of buckwheat or roughly milled buckwheat and yam powder, inoculated with Bacillus natto and fermented to produce fermented soybeans mixed with buckwheat and yam. |
