PURPOSE:To obtain a frozen egg yolk, prevented from freezing denaturation and suitable as a material for a food. CONSTITUTION:This method for producing a frozen egg yolk prevented from freezing denaturation is to add a lipid hydrolase to egg yolk in producing the frozen egg yolk, carry out the enzymic treatment, then make a fluid in a sub- or a supercritical state flow therethrough and subsequently freeze the resultant egg yolk. |
