PROBLEM TO BE SOLVED: To provide an activated carbon selection method capable of decreasing the content of 5-hydroxymethylfurfural in a liquid food and beverage.SOLUTION: Activated carbon capable of decreasing the content of 5-hydroxymethylfurfural in a liquid food and beverage can be selected using, as an index, a reduction rate of 4-methylimidazole at the time when caramel pigment solution prepared by diluting a specific caramel pigment five times with water and activated carbon in an amount of 2 mass% with respect to the solution are brought into contact with each other for one hour at 25°C.SELECTED DRAWING: None |
