PURPOSE: To obtain a food and drink, containing minerals and further a defatted egg yolk protein hydrolyzate as a mineral absorbefacient and useful for supplementation of the minerals to pregnant women and nursing mothers and prevention, treatment, etc., of osteopathy due to the facilitated absorption of the minerals. CONSTITUTION: This food and drink contains (A) minerals (preferably Ca, Fe, Mg, Zn, etc.) and (B) a defatted egg yolk hydrolyzate (preferably containing >=80% fraction having <=2000 molecular weight in proteins contained therein). The ingredient is preferably obtained by initially defatting the egg yolk of a chicken egg with a defatting solvent such as ethanol and providing the defatted egg yolk protein having <=10% moisture, <=10% lipid and >=75% protein, then suspending and dispersing the resultant proteins at 5-35wt.% concentration in water, subsequently adding a neutral protease in an amount of 0.1-5wt.% based on the defatted egg yolk protein and carrying out the reaction at 35-60 deg.C for 5-24hr. Furthermore, the amount of the added ingredient (A) based on the food and drink is preferably 0.01-5wt.%. |
