FIELD: food industry. SUBSTANCE: the present innovation deals with treating raw material with liquefied gas at pressure being above atmospheric one and rate to provide raw material's freezing. Before treatment, raw material is treated with preparation obtained due to successive extraction of Mortierella strangulata micromycete biomass with nonpolar extragent in supercritical state with water, alkali, water, acid, water, alkali and water followed by combining solid residue with the first extract at the quantity of 0,5-1.104 mg/t to be kept for 2-5 h. Moreover, one should apply ammonia gas for treatment. The suggested innovation enables to increase organoleptic properties of juice due to excluding opalescence. EFFECT: higher efficiency. |
