发明名称 NEW LACTOBACILLUS AND LACTIC FRUIT JUICE DRINK PREPARED BY USING THE SAME
摘要 PURPOSE:To provide a new specific lactobacillus strain having a viable count after storing 12 weeks in fruit juice larger than that of a standard strain such as Lactobacillus buchneri JCM1115 and insusceptible to the bacteriostatic and antibacterial actions of polyphenols. CONSTITUTION:The objective new lactobacillus strain is separated from a silage and has the properties of Gram-positive catalase (-). The viable count of the strain after storing 12 weeks in fruit juice is larger than that of a standard strain such as Lactobacillus buchneri JCM1115 and Lactobacillus casei subsp. casei JCM1134. Preferable concrete examples of the strain are Lactobacillus buchneri L-092 (FERM P-12294) and Lactobacillus casei subsp. casei L-013 (FERM P-12293). A lactic fermented fruit juice drink having excellent fragrance can be prepared by fermenting a 10-100% fruit juice (e.g. apple juice) with the strain.
