An apparatus capable of promoting ripening of a liquid such as liquor on an industrial scale by irradiation with weak ultrasonic waves comprises an industrial ripening tank (12) for storing a liquid (14) such as liquor to be ripened, an ultrasonic vibrator (20) capable of continuously applying weak ultrasonic vibration to the liquid (14) in the ripening tank (12), and an oscillator for exciting the ultrasonic vibrator (20). In one preferred embodiment, the ultrasonic vibrator (20) is a floating vibrator (16) which is housed in, for example, a completely hermetically-sealed metallic case (18) and floats on the surface (14A) of the liquid such as liquor.
