PROBLEM TO BE SOLVED: To produce a carcinogenesis preventing substance from natural ferulic acid with a simple reaction process in high yield while taking the environmental problems into consideration. SOLUTION: A carcinogenesis preventing substance expressed by general formula (III) (R1 is H or an alkyl; R2 is a substituent selected from an alkyl group and an unsaturated hydrocarbon group having 5n carbon atoms and n-double bonds, ((n) is an integer of 1-6)) is produced by the etherification reaction of ferulic acid or an alkyl ferulate with an alcohol in an organic solvent in the presence of triphenylphosphine and an azodicarboxylic acid ester.
