摘要 The present invention relates to a tarte-containing ice cream and a method therefor. More specifically, the present invention comprises: a step for preparing a tarte pie by mixing wheat flour, oil, egg, sugar, salt, and spice, aging the mixture, dividing the aged mixture into an appropriate weight, putting the divided mixture in a frame to make a shape, baking the shaped mixture in an oven, separating the baked mixture from the frame, cooling the baked mixture; an ice cream preparing step for homogenizing a raw material for a mix for an ice cream at a primary pressure of 135-145 kg/cm^2 and a secondary pressure of 30-40 kg/cm^2, subjecting the mix to high-temperature short-time (HTST) sterilization at 85°C for 25 seconds, cooling the sterilized mix to 4°C or lower, and aging the cooled mix for 4 hour or longer; and a step for making a tarte-containing ice cream composed of 45-50% of ice cream including 5-7% of milk fat and 17-18% of milk solid, 30-35% of tarte, 10-15% of fruit syrup, and 5-10% of chocolate. The tarte-containing ice cream of the present invention is a product which has a smooth and thick flavor unique to tarte by adding tare, fruit syrup, and chocolate, and allows a consumer to entertain a differentiated texture harmonious with cool ice cream.
