FIELD: food industry. ^ SUBSTANCE: the present innovation deals with the technology for preparing fresh garlic for storage due to successive extracting Mortierella beljakovae micromycete biomass with a nonpolar extragent in supracritical state with water, alkali, water, acid, water, alkali and water followed by combining the first extract with a solid one to obtain the preparation out of the biomass mentioned. Distilled water, gauze filter cloths and cigarette paper should be sterilized. Then it is necessary to prepare 70%-ethanol solution upon sterilized distilled water and 0.01%-suspension of the preparation obtained out of the biomass mentioned. Garlic should be inspected, washed in running drinking water to be then kept in the suspension of the preparation obtained out of biomass at room temperature for 10 min to be dried at 305C up to residual moisture content of the upper scales ranged 18-20%, then it should be divided into cloves to treat each clove with a sterilized gauze filter cloth impregnated in ethanol solution. Then one should irradiate the cloves due to ultraviolet irradiation from opposite sides for 30 min/each clove at radiation power ranged 1.5-2.5 W/cu. m. Then it is important to pack garlic under aseptic conditions per 5 cloves into cigarette paper to arrange them into sterile polymeric trays to form a single layer. The innovation provides prolonged storage period of garlic up to 45 d for its further application in cosmic nutrition. ^ EFFECT: higher efficiency. |
