PURPOSE:To make bread having a high flavor by employing a specific yeast belonging to the genus Saccharomyces. CONSTITUTION:A yeast [e.g. Saccharomyces.cerevisiae AEC 30 (FERM BP-2481)] belonging to the genus Saccharomyces, having S-(2-aminoethyl)cysteine resistance and having the producing ability of isoamyl alcohol and isobutyl alcohol is employed to make bread. |
