PURPOSE:To produce a safe food preservative by using a usual and readily growable microorganism such as a yeast, producing an antimicrobial substance having antimicrobial effects on various bacteria and paying attention to nonproduction of any substance toxic to the human body in those produced by usual yeast CONSTITUTION:This method for producing a food preservative containing an antimicrobial substance produced by a yeast is to grow the yeast in a culture medium containing glucose, nutrients and inorganic salts required for growing the yeast until the stationery phase is attained, then remove the yeast, as necessary, supply the consumed glucose thereto, regrow the yeast until the stationary phase is attained, carry out the operations at least two or more times and thereby produce and accumulate an antimicrobial substance. |
