PROBLEM TO BE SOLVED: To provide a water- and oil-repellent paper exhibiting excellent water repellency and oil repellency, causing little lowering of the water repellency and the oil repellency even at a folded part in the case of folding the paper and having excellent releasability, and safety and to provide a method for the production of the paper. SOLUTION: The water- and oil-repellent paper having excellent folding resistance has a silicone resin layer having water-repellent, oil-repellent and releasing properties and formed on at least one surface of a paper substrate. The oil resistance of the flat part of the paper measured in conformity to the J.TAPPI Paper and Pulp Testing Method No.41-83 is≥9 in terms of Kit value, the oil resistance of the folded part in the case of folding the paper is≥8, the water-repellency of the flat part measured in conformity to the J.TAPPI Paper and Pulp Testing Method No.68:2000 is R8 or more, and the water-repellency of the folded part is R7 or more.
