PROBLEM TO BE SOLVED: To efficiently produce the subjectγ-polyglutamic acid that is useful in food, cosmetic, medicine and the like by culturing a microorganism that belongs to Bacillus, is capable of producingγ-polyglutamic acid and is deleted from the activity of glutamate synthetase in a medium. SOLUTION: A microorganism that belongs to Bacillus, has the activity of producingγ-polyglutamic acid and is deleted or reduced from the activity of glutamate synthetase, [for example Bacillus subtilis UT-1 (FERM P-17400)] is cultured in a culture medium including glutamic acid or its salt an the objectiveγ-polyglutamic acid is collected from the culture mixture, which is well know as threads of Natto and useful in many fields of foods, cosmetic, medicines and the like efficiently with increased production yield. |
