PROBLEM TO BE SOLVED: To provide a method for producing processed fruits, capable of producing in a short time, processed foods or edible raw materials such as high-quality processed fruits, for edible use or edible materials.SOLUTION: Super heated steam made by heating air containing nearly saturated moisture vapor is jetted to heat from a vertical direction to fruits which are placed on a conveyor 121 and conveyed into a heating area 120. A weight of fruits is 10 g or more, a temperature of super heated steam to fruits of less than 30 g is 200-300°C, and a heating time by super heated steam is 3-5 minutes. Furthermore, a temperature of super heated steam to fruits of 30 g or more is 240-320°C.SELECTED DRAWING: Figure 1 |
