Food composition based on pickle in the form of grains having a diameter of 0.5-4 (preferably 1-3) mm, comprises a preserving agent. The preserving agent is edible vegetable oil having an amount of 2-15 (preferably 4-6) wt.%. Independent claims are included for: (1) use of edible vegetable oil in the food composition based on pickle for improving stability of organoleptic properties of the food composition; and (2) preparing the food composition based on pickle in the form of grains with highly stable organoleptic properties, comprising (a) providing the pickle, (b) cutting the pickle to obtain grains having the diameter of 0.5-4 (preferably 1-3) mm, (c) removing the greater part of aqueous phase by sieving and then draining to obtain semolina grains, and (d) adding the edible vegetable oil in the semolina grains and then homogeneously mixing. |
