The locking head for jam jar lids has cams (4) and shafts (11) to control rollers (15) with an end lever (12) carrying a roller (13) following the profile (5) of the cam. The other end has a lever (14) with a locking roller to lock the cover onto a jar. At least one control shaft has a sensor to measure the torsion of the shaft to give a value representative of the lid locking torque.
