FIELD: biotechnology, natural compounds. SUBSTANCE: method involves preparing sap and an aqueous extract from fresh tubers and husks or dried milled tubers. The latter are obtained by mixing the dried milled tubers with hot water at ratio 1:6, kept at 70 C for 12 h and extraction is carried out at 80 C. An aqueous extract is separated, extracted three times ageing with water at ratio 1:4 for 40 min followed by extracts combining. Purification of sap diluted with water (1:1) obtained from husk aqueous extractions or dried tubers is carried out with calcium carbonate at 85 C or 80 C for 1 h for sap and husks and dried tubers, respectively. Extracts are filtered, filtrates are evaporated and crystallization of crude inulin is carried out at 4 C into cooling for 5 days from aqueous extracts after alcohol addition at ratio 1:1 or from the diluted sap. Inulin precipitates are separated and dissolved in hot water at 75 C. Additional purification involves stages using anionite, aluminium oxide, calcium carbonate followed by purification using cationite and anionite. Inulin is crystallized and reprecipitated from an aqueous-alcohol mixture (1:3) at 4 C for 24 h into cooling. Obtained product is dried and milled.
