PURPOSE:To prepare beer having fine and refreshing taste and flavor free from coarse taste and exhibiting excellent stability in chilled and frozen state by lowering the liquid temperature in a wort-preparation step, etc., to the freezing temperature and removing the generated coagulum. CONSTITUTION:This beer is prepared by lowering the liquid temperature to the freezing temperature (-0.5 to -3.0 deg.C) in at least two steps in three steps comprising a wort-preparation step, a prefermentation step and a beer brewing step and removing the formed coagulum. Preferably, the freezing temperature is -0.5 to -2.0 deg.C in the wort-preparation step and -1.5 to -3.0 deg.C in the prefermentation step and the beer brewing step. |
