A process mixing the black soybean skin corpuscle in which Antocyanine is contained and the soft water is provided to solve the problem of the loss of the bean skin, the loss of the Antocyanine which is the bioactive substance and jumping GI index due to using sugar by using the natural polysaccharide trehalose. A manufacturing method and apparatus of black soybean Antocyanine juice using the black soybean skin corpuscle in which Antocyanine is contained comprises the following steps of:Va step(1) making Antocyanine juice by mixing black soybean skin corpuscle in which Antocyanine is contained and the soft water of the and hardness 0; a step(2) steaming the black soybean Antocyanine juice; a step(3) manufacturing Antocyanine juice which is homogenized by mixing natural polysaccharide trehalose, red-ginseng powder, bamboo salt, cardamon powder with the steamed black soybean Antocyanine juice; a step(4) automatically packing in the constant container the black soybean Antocyanine juice; and a step(5) developing the black soybean Antocyanine juice as products by cooling the black soybean Antocyanine juice after 2 shift steam sterilization.
