PROBLEM TO BE SOLVED: To provide a method for industrially advantageously producing with a simple technique an anthocyanin-based coloring matter containing neither offensively odorous component nor flavor component. SOLUTION: The method comprises the following procedure: A coloring matter stock solution containing the anthocyanin-based coloring matter is brought into contact with a porous resin to make the coloring matter adsorbed to the resin, treating the resultant porous resin with a non-hydrophilic organic solvent, then treating the thus treated porous resin with a hydrophilic organic solvent to effect escape of the objective coloring matter adsorbed to the porous resin into the hydrophilic organic solvent.
