PROBLEM TO BE SOLVED: To provide bread having sweetness and softness and whose aging is slow, and a production method thereof.SOLUTION: A production method of bread comprises: (a) a step for mixing and heating wheat flour, water and α-amylase, or, mixing and heating wheat flour and water, then adding α-amylase and then further heating, thereby preparing a saccharified dough whose saccharization degree is 100-2000; and (b) a step for using the saccharified dough for preparing a final dough.SELECTED DRAWING: None |
