PURPOSE: To improve the temp. control accuracy on the way of cooling and to obtain a cooling controls method for plate producing the plate having high quality of uniform material in the longitudinal direction by changing over a liquid supplying condition of a liquid spraying header which does not change over the liquid supplying condition just before supplying the liquid. CONSTITUTION: For example, in the case the temp. at the finish outlet side changes to, such as 850 deg.C→860 deg.C→850 deg.C→840 deg.C→850 deg.C in each sample, the number of water spraying valves in a fourth section is changed to, such as 6 pieces→7 pieces→6 pieces→5 pieces→6 pieces. At this time, the order of increase of the water spraying in the fourth section, e.g. fixes from the upstream side to the downstream side, and as the valve to newly start the water spraying, the just next valve to the last valve in the order among already the water-sprayed valves, is selected and on the other hand, as the valve to newly stop the water-spraying, the valve water-sprayed at the earliest among already the water-sprayed valves is selected. By this method, each valve in the fourth section is not turned on and off in a short period.
