发明名称 HYBRID YEAST STRAIN AND PRODUCTION OF WINE USING THE SAME
摘要 <p>PURPOSE:To obtain a new hybrid yeast strain capable of producing excellent fermentation products by the syngenetic crossing of Saccharomyces cerevisiae RIFY 1001 with Saccharomyces bayanus VORI-WE 452. CONSTITUTION:Saccharomyces cerevisiae RIFY 1001 as a wine-producing yeast strain and Saccharomyces bayanus VORI-WE 452 are inoculated into respective media and cultured at 25 deg.C for 7 days to form spores, respectively. The spores of each strain are added with a Zymolyase 20T solution, made to react at 30 deg.C for 15min to dissolve the asci enveloping spores and monadal spores are obtained by dissecting the asci with a micromanipulator. A pair of monadal spores of each strain are placed on the center of a plate medium, cultured at 25 deg.C to form a zygote by the syngenetic crossing. The subculturing of the zygote produces a new hybrid strain of yeast, Saccharomyces cerevisiae excellent in fermentation characteristics and capable of producing wine having good fragrance.</p>
