A process for determining at least one foam degradation rating number for foam on a liquid, in particular beer, has the following steps: foaming the liquid, filling a measurement vessel with the foamed liquid, then measuring the amount of liquid formed in the measurement vessel from the foam as a function of time. The measurement values are continuously recorded and/or are recorded at fixed time intervals related to the time elapsed from the beginning of the measure. A time function is approximated on the basis of the series of measurement values and at least one value which characterises said time function is supplied as rating number of the foam degradation. The dependency of said value from the foam degradation is stronger at moments that immediately follow the beginning of the measurement than at moments when the beginning of the measurement lies further back.
