A manufacturing method of food using salted Codonopsis lanceolata comprises the following steps: pretreating Codonopsis lanceolata slices with a xylitol solution; dehydrating the pretreated Codonopsis lanceolata slices; and salting the dehydrated Codonopsis lanceolata slices. In the case of pre-treating the Codonopsis lanceolata slices with xylitol, the change of texture can be minimized even if a storage period is increased.
