The enzymatic activity of a pectin methylesterase (EC 3.1.1.11) is affected by insertion therein, deletion therefrom or conversion within of an amino acid sequence comprising 22 amino acids A1-A2-A3-..... -A21-A22 wherein A2, A3, A8 and A21 are hydrophobic amino acids, A4 and A6 are polar amino acids, A11 is a charged amino acid, A19 is a polar or neutral amino acid, A1, A9, A10, A13, A14 and A20 are preferably hydrophobic amino acids, A5, A7, A16, A17, A18 and A22 are preferably polar amino acids, and A12 and A15 are preferably charged amino acids. A nucleotide sequence coding for the 22 amino acid sequence is also claimed. |
