<p>Relatively large-sized hollow cakes containing puffed chocolate and having a very light texture. Namely, hollow cakes having a space volume of up to 100 ml. These hollow cakes containing puffed chocolate, which are composed of an air-containing chocolate dough comprising a tri-saturated fatty acid glyceride mixture containing a diglycerol fatty acid ester or an edible fat with behenic acid and a BOB seed agent or crystalline BOB powder and a hollow cake having this air-containing chocolate dough filled therein, can be obtained by puffing the air-containing chocolate dough in the hollow cake under reduced pressure and then cooling to give puffed chocolate having an apparent specific gravity of 0.14 to 0.30.</p> |
